Once the beans are picked and sorted they are sent off to the drying trays. These are placed outside in the shade where possible or taken to artificial drying areas that are set up with mechanical dryers to speed up the drying time. Drying and storing the coffee beans correctly will allow you to have up to a year before using them. Little know about the coffee plant is that while you are having that coffee at home the plants are contributing oxygen to help the air quality. They omit as much as fifty percent of what the rainforest produces in a similar square foot area and that goes a long way in helping the environment.
